Have to add:
* Perian, the Swiss Army knife of video
* GarageBand, included with new Macs and full of features in free form, but with room for expansion and gear
* Namemangler, another renaming app
* Mac the Ripper, though no longer supported, for ripping DVDs
* iSquint, also no longer supported, for quicker and more efficient conversion of iPod mp4s than iTunes
* iStat, a very good machine status widget for Dashboard
And if ever you were to pay for some software, get a Quicktime key; it honestly unlocks a good deal of abilities when it comes to video.
